私共は160年前から同じことを
続けております。
その一つが
囲炉裏で焼く川魚。

現代の建築法では
当屋の囲炉裏と同じ様式を
作る事は難しく

すべてのお部屋に囲炉裏があり
すべてのお客様の目の前で
川魚を一人の板場がつきっきりで

焼く形を続けていくことは
無駄とも思える時間ではございますが

お客様との会話や
炭火が爆ぜる音
お魚の焼ける香り

待つという空白の時間に
悠久の時を感じることが
ございます。

どんどん人の手を掛けることを
省いていく時代だからこそ
価値のある時間ではないかと
私共は考えます。

ありがたいことにこの頃は
この日本人独自の
移り変わることを愉しむ感性を
当屋にお越し頂く海外の方も
ご理解してくださることでございます。

遠くからお越し頂き
すべてを英語に変えることが難しい
山菜と川魚と発酵食文化ですが

間合い、日本人の精神性、水、神域などを
言葉に頼らず五感の全てを
研ぎ澄まして感じて下さいます姿勢に
私共も心打たれることがございます。

For the past 160 years, we have continued the same traditions.
One of these is grilling river fish over an irori hearth.

Due to modern building regulations, it is now quite difficult to recreate the same style of irori hearths that we have in every room.
Still, we remain committed to personally grilling river fish, one by one, in front of each guest—each fish attended by a single chef from start to finish.

It may seem like an inefficient use of time.
However, we believe there is value in the quiet moments:
the sound of the crackling charcoal,
the aroma of the fish as it slowly grills,
and the conversations shared with our guests.

In these silent pauses, one can feel the passage of timelessness.

We are grateful that, more and more, even our guests from abroad are beginning to appreciate this uniquely Japanese sensitivity—
a way of finding beauty in change, in stillness, and in waiting.

Though our cuisine, centered around mountain vegetables, river fish, and fermented foods, may be difficult to explain fully in English,
our overseas guests often experience it with all five senses—
perceiving the spirit of ma (space and timing),
the quiet essence of the Japanese soul,
the purity of the water, and
the sacred presence of the natural surroundings—
without relying solely on words.

We are often deeply moved by their openness and sincerity.
